Brunswick Stew

Now, I'm a Northerner by birth, and when I was asked this week by Emma's kindergarten teacher to make Brunsick Stew for their Thanksgiving celebration, I didn't know what she was talking about. So, I Googled it!
Seems Brunsick Stew found it's origins on St. Simon's Island here in Georgia and is a pretty popular recipe. There are many recipes listed to make it, but I chose just one. I headed off to Bi-Lo this morning to get the ingredients I didn't have and let me tell you, it's smelling delicious cooking up in my crock pot right now! But let me share with you how to make it!


Brunswick Stew:

One large onion chopped
1 can of lima beans (drained)
1 can of diced tomatoes
1 can of tomatoe sauce or 1 cup of barbecue sauce
2 small cans of mexicorn
1 medium sized bell pepper chopped
2 cups of chicken broth
4 cups of thawed hash browns
1lb of chicken (pulled apart)
3/4 lb of pork (pulled)
1/4 tsp of salt and pepper
1/4 tsp of Worcestire sauce
1 cup chopped okra






all in the pot!


cooking right now!  yummy!


Throw this all in your slow cooker on medium for about 6 hours and you are done! I'll let you know later on tonight how it tastes!

Seems like it will feed a crowd!
